Meals & Deals: Week of 6/21/2015

Here are the meals I’ve got planned, along with my shopping trip. It’s a less ambitious plan than my last one. I made a lot of the recipes last week, but there were a few that I forgot about. I’ll save them for later, since they’d been rescheduled a couple of times. If they don’t show up on my radar, I must not be that excited to actually make them. That’s ok. Ideas and reality are rarely the same. I’ve found staying flexible helps. I did manage to get quite a few recipes posted online, which I was happy about. I’m still adding as many as I can every week, on top of everything else. Slowly but surely!

Father’s Day weekend was very draining but I did a lot of cooking. I ended up doing Sticky Chicken on Saturday instead of the pork tenderloin, which I moved to this coming Saturday. I also ended up with tons of leftovers from the cookout as well. So some of these recipes might not get made in lieu of eating up the mountain of food that’s already in the fridge. We’ll see.

My husband has been begging for beef, which we don’t eat often since it’s so expensive. So that means Bulgogi, which is a marinated Korean barbecue beef that I’ve been making for years. I fell in love with it when I was stationed in Korea decades ago. I’ll be posting an FMs version soon, along with my Breakfast Pizza, Apple Noodle Parfaits, and 5-Way Chili. 

I seem to be on a chocolate kick lately and in a smoothie rut. So I’m trying some new recipes this week and tossing in mulberries and whatever other berries are ripe around here.

I’ve actually got one bush of kale that the wascally wabbits haven’t found, so I’ll toss that in too. And I’m totally in love with collard wraps. They are amazing and very inexpensive! I really need to start growing my own collard greens instead of buying them. Then I can make them for pennies!

My shopping is limited this week. We’ve actually got a lot of food in the house and some in the garden. So I’m buying odds and ends, particularly for Father’s Day and a barrage of upcoming birthdays. I already spent quite a bit at Goodwill this week on kitchen goodies and fiesta-ware, so it’s time to reign myself in!
