Pineapple Mint Smoothies

There's just something wonderfully sunny and refreshing about citrus and mint, especially in summer.

Introducing, the “other” green smoothie. While I love smoothies full of kale, spinach and other greens, there’s nothing like a smoothie made with handfuls of freshly picked mint. It’s easy to grow, and once you have it, you usually have more than you can handle. This is a very good thing if you’re crazy about it like I am.

I grow several kinds of mints and they all spread pretty nicely, but the one that goes nuts in my garden is apple mint. This stuff grows a couple of feet tall and will fight the most invasive weeds, even bindweed, which is a wild form of morning glory. I don’t mind that. I’d rather have the mint.

But what to do with all of it? I dry it by the metric ton, make iced mint tea, mint candy, mint jelly and mint ice cream. I also drink gallons of mint-infused water, and I make mint smoothies!

This recipe is simple and takes advantage of the insane prices of pineapples lately. I’ve been finding them for around a dollar at Aldi and Kroger lately. Fresh pineapple doesn’t last long at my house, so I’ll often chop some up and hide it in the freezer before it’s gone.

These wonderful, sunny smoothies will brighten and refresh your day this summer, or any time!

Ingredients
  • 2 cups chopped frozen pineapple
  • 1 cup fresh mint leaves
  • 1 cup coconut water
Instructions
  1. Blend.
  2. Add some water if the consistency is too thick for you.
  3. Enjoy!
Notes
Freeze in popsicle molds for a very refreshing snack.

But beware, once the hungry hoards know you’re making pineapple mint smoothies, you’ll probably have to share. This recipe makes enough for two, so you may need to buy more pineapples and grab more mint if you suddenly find yourself with extra “friends” who want to help you drink them, like these two below!
